This may be an obvious question, but in order to upgrade, do I need to first
remove the Office 2008 Home and Student, and then install Office 2008 for Mac?
If so, how do I use the database (email, etc.) from my use of the Home &
Student edition in the newly installed Office for 2008 for Mac? Do I copy the
Identities folder to another location and copy it back after installing? Or do
I just install the Office 2008 for Mac over Office 2008 Home & Student?
You cannot run an upgrade. You will need to install the standard version.
Since this has not come up I'm not exactly sure what will happen if you try
installing over since you will be using a difference CD key. My first
thought is to just install over, but the safest way would be to use "Remove
Office" and be sure there are no Microsoft preferences in your User's
Library.

I would backup your Microsoft User Data folder just as added insurance. The
install process should not touch this folder but in rare cases it has.
When you launch Entourage, you can create your Exchange accounts in your
current Identity.
If for some reason you get the message there is a problem with your Office
database, just move the Microsoft User Data folder to the desktop. Let
Entourage create a new one, then move your individual folders back. I had
this happen to me when I did a fresh install on a new computer this week
end.
