MS Word 2000 converts to simple text

I save my word files. Open them back up and half of the document has been
converted to Simple Text and I can no longer read it. It shows up with
periods, boxes, random letters, etc. Sometimes I can't even open the document
because it says it doesn't now the format or it can't find the program it was
created in. How do you fix this one?
