Resource productivity

Please advise on how can I set up a resource in such a
way as to reflect his/her productivity.
Fex: Duration of the task is set to 3 days, but when
entry-level person assigned then it will take him 5 days
to complete.

No way of doing this. Basic problem is that you would have to enter so much
information to allow Project to do this that its quicker to manually adjust
the duration or work fields.

While adjusting duration or work values is the route I'd choose, you might
also use max units as a way making this adjustment across the board for a
particular resource. If you're normal maximum availability is 80%, then
knock the newbie down to 60% to account for lower productivity.
