start time vs start date

The start field for the tasks are only in dates, that doesn't help for the
project plan I'm creating, as many tasks are performed on the same day, but
at different times, so I need to know how to track the start and end times
instead of dates (e.g. task 1 is from 12:00-2:15, task 2 is 2:15 to 2:40,
task 3 is 2:40-3:05).

Welcome to this Microsoft Project newsgroup :)

Tools/Options.../View tab and select a Date format to include the time.

Tools, Options, View, Date Format, select the top one (it has 12:33 in it)
