How do I change Project to handle Saturday and Sunday as
work days? Currently, if a task spans several days that
include the weekend, Saturday and Sunday are not counted
and I want theose days counted as work days. Yes, I am
new to Project and suspect this is simple.

You are right, it is simple.
You go to Tools / Change Working Time
You select the standard calendar.
Click on the column header for Saturday, hold down the CTRL key and click on
the column header for Sunday
and click the Nondefault Working Time radio button.
Choose your working hours and you're good to go.

Now, when you add a resource they are automatically assigned to the standard
calendar and your weekend work days requirement is fulfilled.
