Man-hour scheduling

I am trying to create a manufacturing/production schedule using standard
man-hours instead of per a calendar. Hence the calender will be 24hrs per
day, 7 days per week. Project keeps forcing weekends and hours into my
project and I want to strip all of that out.

Just FYI - Project isn't really a very effective production scheduling tool.
While you might be able to kluge something together, there are fundamental
differences between a project environment and a production environment. The
most glaring is that projects always have an end point and an optimized
schedule is the one that gets you there as soon as possible. Production,
OTOH, is on-going and repetitive and there is no end point that defines when
the schedule has been optimized. MS Project is designed to build a schedule
with the shortest duration. Production has no duration to shorten - by
definition (one hopes) it goes on forever. Jim gave you the answer on how
to get calendars to include weekends, etc, but that's only one of the
challenges you're going to face.
