why are there multiple copies of outlook running

If I close Outlook, it never completely leaves memory. If I open Outlook
again, then I have 2 copies. I've had 3 or 4 copies running in memory at the
same time.

This is often caused by faulty addins. Virus scanners are a known source of
doing a great job (sarcasm) in creating a new outlook.exe process for each
email that they scan. Start with disabling their integration with Outlook.

For other addins see;
